Creamy Cashew and Strawberry Slice Raw, Seasonal, Vegan and Very Delicious!
Put the cashews in a bowl and cover with water (by about an inch), leave to soak for 4 hrs.
Blend the walnuts, dates and (half of) the coconut oil. Pour into an 8 inch tray, press down evenly. Refrigerate.
When cashews are ready, drain excess water, rinse and blend with (the other half of) the coconut oil and sweetener.
This creates a thick creamy paste - you can add fresh fruit here if you like, or dashes of water to moisten.
Pour onto the base and spread out evenly.
Top with fresh fruit.
Slice and Enjoy!
