Lemon Chia Pudding With Strawberry & Rhubarb Compote
Serves 2 

For the chia pudding:

250 ml oat milk 
3 tbsp oat cream 
Zest of 1 lemon 
Juice of 1/2 a lemon 
5 tbsp chia seeds 

For the compote: 

200g strawberries 
1 stalk of rhubarb 
A pinch of cinnamon 
4 tbsp maple syrup 

First combine the oat milk, oat cream, lemon juice and zest and maple syrup in a small bowl. Tip in the chia seeds and give it a good stir. Now cover and set aside for a few hours or overnight in the fridge. 

To make the compote put the strawberries and rhubarb in a saucepan with a couple of tablespoons of water. Bring to the boil then turn down and simmer for 10/15 minutes until the fruit is looking soft. Add the cinnamon and maple syrup and simmer for another 10 mins until the compote starts to look thick. Take off the heat and leave to cool. 

When you are ready to eat, divide the chia pudding into 2 bowls and top with the cooled compote. This makes a yummy pudding or even a treat for breakfast!!
